The highest quality anchovies are found in April, May, and June; this is when Don Bocarte purchases the anchovies and prepares them with salt, where they are preserved for a minimum of 8 months and the temperature and humidity are closely monitored. The anchovies are cleaned by hand and undergo a very strict quality control process. These are the creme de la creme of anchovies. Neither salty nor spiny, not the scratchy and salty ones you find on pizza; these are just creamy and melt in your mouth.
